This is the 2nd Edition of my 2nd book. I've added more information about eating gluten-free and corrected a glaring error that a reviewer was kind enough to point out. I've also had the book reviewed by a qualified third party and have implemented many of the reviewer’s suggestions. I think that it’s now a very good book and will help people with diseases causing gluten intolerance a great deal, especially if they are new to the disease.
This book is designed specifically answer questions. My 1st book, “How to Eat Gluten Free… The Official Guide – 2012” which was written to help newly diagnosed individuals with gluten intolerance or gluten sensitivity adjust to the changes in their diet as successfully and as easily as possible.
And, please, for you highly technical readers out there, this book is primarily for non-scientific individuals who are newly diagnosed with a condition causing gluten intolerance or gluten sensitivity. I take some liberties with terminology and explanations to keep it simple and understandable for non-scientifically trained readers.
I'd like to share with you what I have learned from living with celiac disease for the over 11 years since I was diagnosed… as one friend to another…
I was the primary care giver for my mother-in-law for 5 or 6 years before I was diagnosed with the condition. So, it’s been close to 17 years since I first began to learn how to live and deal with gluten intolerance. I’ve had a lot of time to learn how to live with gluten intolerance comfortably.
When I first began taking care of my mother-in-law, there was very little information outside of medical textbooks and reference materials about the disease. Awareness of the disease was almost non-existent in the public at large.
The internet was in its infancy and even doctors were generally unfamiliar with the disease.
Today, 15 to 20 years later, public awareness about gluten intolerance has gone global. And, even though there is much more information, it is not coordinated well. It is hard to find any one resource that can answer most, if not all, of a gluten intolerant individuals questions about their condition.
I have tried to answer as many of those questions as possible.
I talk about things like:
- The 7 common warning signs that may tell you that you may have celiac disease... This is an especially important heads-up if you see these symptoms in children.
- What to do if you have a blood relative who has been diagnosed with the disease... especially if you have no symptoms.
- How to find out for sure if you have celiac disease.
- When celiac disease actually starts and what may cause it to "go active."
- The one thing that you can do to stop the immediate symptoms of celiac disease.
- How to avoid long term, serious damage to your body from celiac disease.
- The major ways that celiac disease can hurt you.
- How to tell if something you want to eat has gluten in it.
- What is the largest amount of gluten that an individual with celiac disease can safely eat.
- What to say to your waiter or waitress to be sure that your meal will be gluten-free.
- And, finally, I've included a reprint of my article about gluten intolerance and its long-term effects called "Gluten Intolerance, A Silent And Vicious Killer." I think it's a must-read for anyone with gluten intolerance... Especially those who have blood relatives with no outward symptoms of the disease.
This book is Volume II of the Elegantly, Gluten-Free Survival Series and is written to help people with gluten intolerance have a single, reliable resource, written in common, everyday English, that will answer questions that everyone with the disease will eventually ask.
